Dark tile or stonework offsets a white themed kitchen really well. Or you can create that colonial feel with red brickwork. Glass tiles are also incredibly striking and a magnet for the eyes. Otherwise, consider square tiles but turned so they are diamond shapes on the wall. Your backsplash can even continue on from your concrete countertop, sometimes all in one piece.
